Fruit-forward, sessionable spritzes are surging on spring menus as guests look for bright citrus and tropical profiles that feel refreshing, photogenic, and lower in ABV. Global on-premise cocktail engagement is strong (cocktails are now the 4th most popular category out-of-home), with flavour exploration and no/low options rising fast (CGA). In Australia & New Zealand specifically, Gen Z is disproportionately cocktail-curious - around 31% of Gen Z choose cocktails when they’re out, making them a high-value spring audience for venues.
Moderation is reshaping menus. Guests are opting for lighter options more than ever. Forecasts from IWSR place the no and low alcohol category at a combined +4% volume CAGR through 2028, with no alcohol alone driving +7% CAGR (IWSR). This means guests are increasingly looking for lighter spritzes and alcohol-free riffs that deliver full flavour without full strength. Offering a spectrum of spritz options - from classic to low-ABV to zero-alc - keeps groups ordering together and venues capturing more spend.
